I did some measuring of the brewery space on Friday.
When the space was originally designed, there were 4 "huts" which were supposed to be 9'x11'
Apparently the contractor did not have the same unit of measure I do for a "foot". The huts are actually 6'9" x 10'9"
I have been asked "Well maybe that's the OUTSIDE dimension" which, actually... no. Unfortunately, they are simply not the size anticipated.
What is a brewer to do? Well, that's part of the excitement of building a brewery- figuring it out.
The original 9'x11' would have fit our fermenters, JUST BARELY. 3, 6 bbl and 3, 3 bbl. At this point, I will just have to figure out where to put one 6 and one 3. Probably in the brewhouse.
This was GOING to be my "office" space, but I can set that up in a mobile fashion in the courtyard. Believe me there is a lot of record keeping to do, to keep the brewery compliant with Federal and State laws, along with ordering ingredients, etc etc.
Our equipment manufacturer, Bru-Gear, is local to Phoenix and Phil is helping put some drawings together and we are figuring it out together.
In other exciting news, we are ordering 75, 50l kegs from BJ's Brewery. They have had these in storage for a while and they are super inexpensive. This should save is about $7500 compared to other keg options.

Preview Day
Yesterday, we had a few people over to The Perch.
The picture represents about half of the people who dropped by fr a preview tour and to talk about our favorite topic- BEER!
There isn't a "fog" filter on the picture- that's the water from the misters which are placed throughout the garden courtyard. There really is no place in Phoenix like this location- the fact that when the liquor license is activated, it will cover the entire premises is AWESOME. There are about 60 birds in the courtyard- Darwin and Hurcules are the Macaws, Luna is the Cockatoo.
The Arizona Trappist Club dropped by the other day and is thrilled that The Perch will be opening with several Belgians on draft
We can't wait to get The Perch open, to see all our friends have a nice place to relax and try my tasty brews.
